"I have to be careful -- something has to be removed from the original recipe, and something has to be added. Italian cuisine sometimes requires a little adaptation for Russian gourmets. It can be explained by the local climate, Russian mentality and the history of Russian-Italian relations."

What is the most important or surprising thing you have learned in your profession?
"When I was still studying, I thought I would have to work a lot, about 10 hours a day. And when I became a professional, I realized that I needed to work 25 hours a day."
