Storing Fresh Fungi

Mushrooms don't keep very well or very long, so it's best to eat them as soon as possible. If you can't eat them straight away, they should be stored in a paper bag and not in plastic, as they need to breathe. If you need to keep them for more than a couple of days, placing the paper bag inside a plastic bag with holes cut in it may stop the mushrooms from drying out. Three days is about as long as they will stay good. Worms eat their way upward, so if you don't plan to cook immediately, stand them on their caps.

Cleaning Your Mushies

There is some debate as to the best method for cleaning mushrooms -- washing or wiping. Most agree that wiping with a wet paper towel is best, although some say it is a laborious waste of time and it is easier to simply shove them under the tap. Either way, mushrooms easily become water logged, so they should not be left in water for long and should be used immediately after cleaning.
