Casual's new head chef, Andrea Maestrelli, has prepared a spring menu for the restaurant. The new selections are decidedly Mediterranean and include such dishes as rucola and mache with fresh and sun-dried tomatoes under balsamic vinegar and olive oil (690 rubles), asparagus with frisee and mache under an orange juice and olive oil dressing with slices of orange (790 rubles) and sea bass baked with fennel, slices of orange and pineapple liqueur (1,090 rubles).

Vinoteca Dissident has introduced its latest round of degustation sets. Two sets are offered -- one featuring three glasses of Spanish red wine and one with three glasses of Sauvignon blanc. The collections each come with three different dishes matched to each glass of wine. Served with the red set, "Unchanging Traditions of Spain," are chicken liver pate with toasts fried in cold-pressed Spanish olive oil, Spanish Alpujarras jamon with Catalonian melon, and grilled beef with thyme and rosemary. The Sauvignon set, which is titled "Discoveries of the 20th Century," is accompanied by sea scallops served with artichokes under a lemon sauce, souffle of turbot and Burgundian snails in garlic butter. The red set costs 1,400 rubles while the white costs 1,200 rubles. New regular dishes have also been added to the menu.

Grand Cru Black, the wine bar that also serves molecular cuisine, has introduced some new spring dishes. Among them are such interesting creations as lamb tartare (280 rubles) -- fine ground lamb with Tuscany olive oil, slivers of Piedmontese truffles and a trace of cress, as well as risotto carbonara (280 rubles, pictured) -- classically prepared risotto with a touch of saffron served under a zabaglione froth of white wine, saffron, sugar and egg yolk, served with a poached egg and a thin bacon chip.

Those grieving the recent demise of Doug's Steak House should take heart -- a new Goodman Steak House has just opened in the Yerevan Plaza shopping center. The new, fifth affiliate in the popular chain seats 120 guests, not including seating for eight in its VIP section. The design is the same as in the other outlets, as are the steaks.
