Chef's Secrets: Vegetable Paella With Tofu

Stary Cherdak's chef Mikhail Galeyev shares a recipe for a vegetarian rice dish.


300g onion
8g garlic
40g fresh sweet Bulgarian pepper
40g zucchini
50g tofu
40g chickpeas
40g boiled rice
15g olive oil
vegetable bouillon (100g per portion)

To taste: 2g each of fresh basil, Vegeta seasoning, thyme, turmeric

Fry the onion and vegetables in the olive oil, add vegetable bouillon, freshly chopped basil, thyme, turmeric and Vegeta. Add the boiled chickpeas and boiled rice. Allow to thicken until the bouillon has boiled down. The paella should become slightly thin. Add the tofu. Serve sprinkled with chopped cashews and fresh basil.
