Chef's Secrets: Paskha

a recipe for a traditional Russian Easter treat.


High-fat tvorog (curd cheese) or "tvorog/syr domashny," nuts, candied fruits, butter, sugar, raisins, dried fruits -- any of these according to your taste and fantasy.

Press the tvorog in cheesecloth to remove moisture; the best old method is to hang it in the cheesecloth overnight. Most importantly, the tvorog should be dense.

Into this mass, add melted butter, sugar, candied fruits, nuts, raisins or other dried fruits (you may improvise). Mix these ingredients into a homogenous mass.

Put the mass into a pyramid-shaped paskha form and refrigerate for an hour.

After removing from the refrigerator, take the paskha out of the form and decorate with candied fruits and nuts.
