Layered Salad in a Whisky Glass

Mikhail Galeyev, the chef of Stary Cherdak, shares a recipe from the restaurant's Lenten menu.

Layer the following ingredients in glasses from bottom to top in the given order. Leaves should not be chopped, but finely torn by hand.

For five portions:
30g chopped strawberries
10g iceberg lettuce
10g mache (lamb's lettuce/corn salad)
10g wood-lettuce (latuca)
15g daikon, finely chopped
15g red radish, finely chopped
4g watercress


For the sauce:

Mix 6g grated garlic with 16g Dijon mustard, add 70g freshly squeezed mandarin juice, 13g lemon, 20g soy sauce and Tabasco to taste. Beat together with 100g olive oil. Add 2g sugar.

Decorate the salad with mandarin segments.
