Restaurant 1 Red Square's head chef, Sergei Khomyakov, shares some blini recipes in honor of the Maslenitsa holiday. Each makes about 20 blini.

Fast Guryevskiye Blini
1kg wheat flour
3 tablespoons butter
6-8 egg yolks
400g-600g kefir (1% fat)
15-20g salt

Rub the yolks and butter into the flour. Add the kefir and mix until smooth. Add salt to taste. Fry in butter or vegetable oil. Smear with butter before serving with sour cream or cream.

Boyarskiye Blini
To be made in three stages.
100g wheat flour
200g buckwheat flour
2 tablespoons yeast
130g water
400g milk (boiled, sterilized, Mozhaiskoye or toplyonoye)
2 tablespoons butter
2 eggs

Take 100g of buckwheat flour, 100g of wheat flour and the yeast, and mix together with the water.

Wait until it rises, and then add the remaining 100g of buckwheat flour.

Wait until it rises again.

Then add cold milk, butter, eggs and salt.

Allow to rise a third time before beginning to cook blini.

Serve with milk, kefir, sour cream or red caviar.
