"Dimlyama. It is braised lamb cooked for 45 to 50 minutes with vegetables. Everything is natural and it is very dietetic."

Weirdest thing you've ever eaten?

"Frog legs. It was an unexpected order by some foreigners for a banquet at a restaurant in Tashkent where I worked, but I did not know how to prepare them so I invited a French chef over from another local restaurant. He insisted I try it, but I had to drink some vodka first."

Do you try to be authentic or adapt the cuisine to the local market?

"We adapt the cuisine, cut out the fat. We prepare the food for Moscow gourmets."

Most surprising thing you've learned as a chef about food

"You have to make food with the soul. Even if it is not your profession, if you prepare the food with love, it will taste delicious."
