Best dish
"Warm salad with mozzarella cheese, dried tomatoes, pesto sauce, ruccola, fresh strawberries and balsamic vinegar."

Most popular dish
"Grilled pork loin with vegetables and potato with garlic."

Favorite dish
"Rib-eye steak, medium rare, with fresh vegetables and fried potato."

Favorite (other) restaurant in Moscow
"Nosorog in Marino, which closed; also Oliva restaurant in the BMW service center Yunit-Sever."

Favorite restaurant worldwide
"It's my dream to visit the ancient restaurant La Tour d'Argent in Paris, specializing in duck."

Strangest dish you've tried
"Fried ostrich under foie-gras sauce in Roman Rozhnikovsky's restaurant Reporter, where I previously worked."

Is your cuisine authentic or adapted?
"Stary Cherdak's cuisine is adapted both for Russians and for foreign guests. We serve traditional dishes of Russian cuisine and more modern European dishes. Authentic cuisine is for aficionados."

Comment on the local dining scene
"The restaurant sector is actively developing, however it is not yet saturated with inexpensive and quality establishments. There is a lack of professional kitchen personnel, and there are not enough educational institutes with a culinary specialization. It is difficult to find good chefs."

Most important thing you have learned in your profession
"If you want your restaurant to be successful, you must prepare every dish as if it were for yourself. A chef does not have the right to cook badly, unappetizingly, without soul -- or else he will lose his guest."
