Viaggio's head chef, Denis Voronin, shares his recipe for a homemade ice-cream treat, Semifreddo, which can be made without the use of an ice-cream maker.

Serves 10
500g confectioners' cream
5 eggs
125g granulated sugar
130g almonds
200g fresh strawberries
10g caramel sauce
fresh mint
almond flakes

Whip the chilled confectioners' cream to a thick foam.

Carefully separate the egg whites from the yolks.

Add sugar to yolks and whip.

Whip egg whites to a thick foam.

Brown almonds without oil and grind into crumbs in a mixer.

Combine all the ingredients (except the mint and strawberries) and mix gently by hand.

Pour into pan and freeze at minus 18 degrees Celsius.

To serve: Pour caramel sauce onto a plate in a random pattern and then set some semifreddo on top. Place sliced strawberries next to it and sprinkle with almond flakes.

Garnish with mint sprigs.
