COOK'S CORNER: One Sauce Wonder




Ever so rarely, one stumbles upon a recipe that becomes a foundation for a variety of great dishes. That type of recipe is called "a keeper". Keep it handy and keep on making it!


Spicy Thai Peanut Sauce is just such a recipe. I initially served it alongside vegetable wraps, but found it so tasty that I could conceivably slather it on wooden shingles and still enjoy it.


The beauty of this easy, yet exotically spiced recipe is that it can be so much more than a dipping sauce - it works equally well with meat, pasta or a salad.


The only thing I insist upon is using fresh lime juice. Bottled juice is a pale substitute for the real deal.


Spicy Thai Peanut Sauce


125 ml peanut butter


50 ml fresh lime juice (about 4 limes)


50 ml soy sauce or fish sauce


5 cloves of garlic


25 ml sugar


15 ml grated fresh ginger


5 ml grated lemon rind


5 ml chili paste (chili flakes can be


substituted)


2 ml grated lime zest


Combine everything in a blender or food processor until smooth. Use as a dip or in one of the recipe ideas below.


Sates With Spicy Thai Peanut Sauce


675 g sirloin or chicken breast


3 garlic cloves


60 ml soy sauce


30 ml brown sugar


30 ml oil


60 ml Spicy Thai Peanut Sauce


Extra Peanut Sauce to Serve on the Side


8-10 bamboo skewers,


soaked for 30 minutes


Cut beef or chicken lengthwise into strips about 1.5 cm wide. Thread the meat onto skewers.


Combine remaining ingredients and marinate the meat for an hour in the fridge. Broil about 15 cm below the heat for 5 minutes per side. Serve on a bed of rice and generously drizzle peanut sauce over meat.


Serves 4.


Pasta With Spicy Peanut Sauce


500 g pasta, freshly cooked


1 cucumber, halved lengthwise,


thinly sliced


1 red pepper, thinly sliced


3 green onions, thinly sliced


3 tablespoons chopped fresh cilantro


1 cup Spicy Thai Peanut Sauce


Rinse pasta under cold water to cool. Drain well.


Combine the next 4 ingredients in a large bowl. Add peanut sauce to taste. Serve pasta immediately.
