Roast Salted Nuts

A recipe from Natalie Horsting, head chef at Simachev Bar.

150g mixed nuts (any of the following: cashew, pecan, macadamia, brazil nut, hazelnut, almond, pistachio)
10g sunflower seed
10g pumpkin seed
5ml honey
10 ml olive oil
red chilli, finely diced

Dry roast your nut mix in the oven at 180 degrees Celsius for approximately 10 minutes until they begin to color.

Meanwhile, in a small saucepan, heat the honey and chilli.

Remove the nuts from the oven, drizzle with oil and stir through the honey infused with chilli.

Return to the oven for another five to 10 minutes until light golden in color.

Remove, allow to cool, stir through salt to taste.

Enjoy with a cold beer and friends!
