Tartare of Herring and Green Apples on Scandinavian Toast

Ingredients:
30g lightly salted Norwegian herring filet
40g green apple, peeled
50g white bread
15g shallot
25g milk
10g sunflower oil
2/3 hard-boiled egg
lemon juice, apple vinegar (optional)
coarse Scandinavian bread, toasted

Soak the white bread and herring in milk. In a blender, mix the herring, apple, white bread, shallot and egg. Add sunflower oil as well as the lemon juice and apple vinegar if desired, then mix again. Serve on toast from coarse Scandinavian bread with sunflower seeds.
