Weirdest thing you've ever eaten
"A mangrove is a tree that grows in Casamance region in the south of Senegal, West Africa, usually near the water. The roots grow above the shallow waters, oysters can be found on the roots. Locals collect the oysters and prepare a traditional dish with rice and home-made sauces."

Do you try to be authentic or adapt the cuisine to the local market?
"It depends. I like to be authentic on the one hand, on the other, I like to get acquainted with the local flavors and use local spices in my dishes."

Comment on the state of the local dining scene
"I was amazed to see a great variety of restaurants here in Moscow. The standards are high and sophisticated. Creative concepts and many different cuisines are presented here, and the food is prepared by very talented chefs."

Most important or surprising thing you've learned about food
"I can't remember something particular. Here in Moscow I was surprised to see mostly women working in the kitchen in comparison to France or Europe in general."
