Herring Salad With Onion Sauce, Ruccola, Borodino Croutons and Sunflower Seeds

A recipe from restaurant critic Alexei Zimin, guest chef for restaurant Prostiye Veshchi's "New Seledka" Norwegian herring promotion running April 5-12.

Ingredients:
120g oily, lightly salted Norwegian herring
2 tablespoons low-fat sour cream
5g lemon juice
4 green Onions
35g ruccola
10g sunflower oil
20g black bread (borodino bread croutons)
5g sunflower seeds
sugar
red onion

Wash the herring fillet in water and sprinkle with sugar.

In a blender, mix the sour cream, lemon juice, green onion and sunflower oil.

Serve the herring on ruccola dressed with sunflower oil. Pour the sour cream sauce over the herring and sprinkle with the croutons, seeds and red onion rings.
