Chef's Secrets: Barbecue Wings

Ingredients for a 495-gram portion:

80g blue cheese sauce, made from mayonnaise, Dor Blu cheese and cream
90g barbecue sauce
30g wheat flour
645g cleaned chicken wings
75g carrot
75g celery
2g parsley
2g salt
1g black pepper

Cut the chicken wings on the bones, salt and pepper them, coat them in flour and deep fry at 200 degrees Celsius until they have a crunchy crust and are fully cooked. Place them in a stewpot and cover with barbecue dressing. Cut the carrot into strips and lay on a plate with the celery sticks. Serve the blue cheese sauce separately.
