"I am always adapting and adding new dishes to the menu. We like to adapt our menu to our clients."

Comment on the state of the restaurant business in Moscow
"It's developing really strongly at the moment, but there still isn't enough competition. The standard of service is often not particularly high."

Most important thing you have learned as a chef
"The most important thing I have learned is always to keep thinking, rather like an artist does. I'm always thinking about how I can improve my work."
