"I love simple, fresh, organic food, such as fish cooked on the barbecue with a wedge of lemon, fresh salad and sauteed potatoes with barbecued sweet corn. Delicious!"

"The Denis Simachev restaurant and bar where my great friend Natalie is the head chef. We love to share our expat experiences and enthuse about recipes."

Weirdest thing you've ever eaten
"In Hong Kong I tried a local specialty called a thousand-year-old egg, made by preserving duck, chicken or quail eggs in a mixture of clay, ash, salt, lime and rice straw for several weeks to several months, depending on the method of processing. The yolk of the egg develops pale and dark green colors while the egg white is dark brown and transparent. The yolk is creamy with a strong aroma and an almost cheese-like flavor. The egg white has a gelatinous texture similar to cooked egg white."

What you've learned
"Cooking is an art, and it is important to know that you need to have your heart in it, and not look on the profession as just a job, or it will show in the finished product.

"I have always found it is important to visit the country of a cuisine I am studying, it really helps me get a feel for the taste. "
