"In my opinion, carpaccio of sea scallops -- marinate scallops in soy sauce, add honey and Dijon mustard, and serve on frise lettuce."

"We have several popular dishes. One that's very popular is the Caprese salad of tomatoes, basil and buffalo mozzarella. The classic Italian soup cacciuco, made with fresh sea bass, octopus, mussels and sole, is very light yet filling. Of the hot main dishes, one that's worth a mention is the pasta with lobster -- fresh pasta made in our restaurant and live lobster. All the ingredients are braised in a cream sauce with tomato and white wine."

"Seafood Catalana."

"GQ Bar, which does very tasty sushi -- the best in Moscow, in my opinion."

Strangest dish you have ever tried
"Marinated grasshoppers, which I tried in a restaurant in Cuba. I can't say I liked it much, but it was fairly interesting."

Is your cuisine authentic or adapted?
"More likely authentic. We try to maintain classic Italian cuisine and strictly adhere to the recipe. Since practically all our ingredients are brought directly from Italy and we cook in the very same conditions, our dishes turn out just like in Italy. We have a Neapolitan wood oven, in which the pizza cooks for a strictly determined length of time, and a grill in the oven."

What is the most important or surprising thing you have learned?
"The profession of a chef is a profession for your whole life. Every year you learn more and more. No chef can say he knows everything. The most important thing is that in our profession the possibilities for perfection are unlimited."
